Details People in Japan are often infected with Metagonimus yokogawai, a kind of trematode causing severe diarrhea and the aches of the abdomen following eating raw fresh water fish. The important sources of its infection have been demonstrated to be the sweetfish or the Oriental fresh-water trout (Plecoglossus altivelis) and Salangichthys microdon (Japanese icefish). In addition to this fact, several fresh water fish have been incriminated as the second intermediate host. These are mentioned in many textbooks on parasites cited in this communication. The point is that people are infected with M. yokogawai ingesting infective the larvae in the flesh of the fish. There are many kinds of cooking methods for the fish traditionally in Japan. Which are responsible for the infection? This paper describes the dangerous cooking methods and dishes to which M. yokogawai infection is ascribable in an attempt to avoid the infectious disease.
